I made some cupcakes recently and made a little flag decoration for them for the Fiskarettes blog HERE....
I just thought I would share the recipe as they were so darn yummy....
Ingredients:
- 185g softened butter
- 2 teaspoons finely grated orange rind
- 220g caster sugar
- 3 eggs
- 225g self-raising flour
- 75g plain flour
- 60g ground almonds
- 125ml orange juice
- 60ml milk
Butter cream:
- 125g softened butter
- 2 teaspoons finely grated orange rind
- 240g icing sugar
- 2 tablespoons milk
- Preheat Oven to 180C/160 fan assisted. Line 12-hole muffin pan with paper cases.
- Beat butter, rind and sugar in a small bowl until fluffy; beat in eggs one at a time. Transfer mixture to medium bowl; stir in sifted flours, ground almonds, juice and milk, in two batches.
- Place mixture into paper cases. Bake for approx. 30 minutes. Leave to stand for a few minutes before turning onto a wire rack to cool.
- Make orange butter cream. Beat butter and rind in small bowl with electric mixter until as white as possible, beat in icing sugar and milk, in two batches.
- This makes super fluffy buttercream which you pop into a piping bag and swirl over the cake. Add your decoration!
